Chia & Banana Loaf Recipe

Method:

  1. Preheat the oven to 180°C and line a medium loaf tin with baking paper.
  2. Mix the dry ingredients – in a large bowl, combine the spelt flour, chia seeds, baking powder, cinnamon, and sea salt.
  3. Prepare the wet ingredients – in a separate bowl, whisk together the eggs, honey, yoghurt, oil, mashed bananas, and vanilla extract until well combined.
  4. Combine the mixtures – gently fold the wet ingredients into the dry ingredients until just combined. If using walnuts or chocolate chips, fold them in at this stage.
  5. Bake – pour the batter into the prepared loaf tin and smooth the top. Bake for 40–50 minutes, or until a skewer inserted in the centre comes out clean.
  6. Cool and serve – allow the loaf to cool in the tin for 10 minutes before transferring to a wire rack. Slice and enjoy!
