Chia & Banana Loaf Recipe
- 2 cups organic wholemeal spelt flour
- 1/4 cup organic chia seeds
- 1.5 tbsp baking powder
- 1 tbsp cinnamon
- 1/2 tsp flaky sea salt
- 2 large free-range eggs
- 1/2 cup raw native bush honey
- 1/2 cup Bella Vaca yoghurt
- 1/3 cup canola oil (or neutral oil of your choice)
- 3 overripe bananas, mashed
- 2 tsp vanilla extract

Method:
- Preheat the oven to 180°C and line a medium loaf tin with baking paper.
- Mix the dry ingredients – in a large bowl, combine the spelt flour, chia seeds, baking powder, cinnamon, and sea salt.
- Prepare the wet ingredients – in a separate bowl, whisk together the eggs, honey, yoghurt, oil, mashed bananas, and vanilla extract until well combined.
- Combine the mixtures – gently fold the wet ingredients into the dry ingredients until just combined. If using walnuts or chocolate chips, fold them in at this stage.
- Bake – pour the batter into the prepared loaf tin and smooth the top. Bake for 40–50 minutes, or until a skewer inserted in the centre comes out clean.
- Cool and serve – allow the loaf to cool in the tin for 10 minutes before transferring to a wire rack. Slice and enjoy!
