Coconut & Date Ice Cream - Dairy free

A creamy, naturally sweetened ice cream made with wholefoods—perfect for a guilt-free treat!

Method:

  1. In a blender, combine soaked dates, coconut milk, coconut cream, vanilla, and salt. Blend until completely smooth.
  2. Pour the mixture into an ice cream maker and churn according to manufacturer instructions. If you don’t have an ice cream maker, pour the mixture into a container and freeze, stirring every 30 minutes for 3-4 hours to break up ice crystals.
  3. Once the ice cream starts firming up, fold in cacao nibs or chocolate drops, if using.
  4. Freeze until solid, then let sit at room temperature for a few minutes before scooping.
