Coconut & Date Ice Cream - Dairy free
A creamy, naturally sweetened ice cream made with wholefoods—perfect for a guilt-free treat!
Ingredients:
- 400ml organic coconut milk
- 200ml organic coconut cream
- 1 cup pitted Medjool dates (or soaked dried dates)
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 2 tbsp cacao nibs or dark chocolate drops (optional mix-in)
Method:
- In a blender, combine soaked dates, coconut milk, coconut cream, vanilla, and salt. Blend until completely smooth.
- Pour the mixture into an ice cream maker and churn according to manufacturer instructions. If you don’t have an ice cream maker, pour the mixture into a container and freeze, stirring every 30 minutes for 3-4 hours to break up ice crystals.
- Once the ice cream starts firming up, fold in cacao nibs or chocolate drops, if using.
- Freeze until solid, then let sit at room temperature for a few minutes before scooping.
