For a versatile bean mix (perfect for nachos, tacos, or rice bowls), add one tin of organic tomatoes and one tin of drained kidney or turtle beans to a pot. To save money, you can use our dried turtle beans—just soak them overnight before cooking.
Bring the mixture to a simmer, then stir in two tablespoons of Mexican spice mix. Simmer on low heat for 15–20 minutes, or until the beans are tender and the sauce has thickened. Taste and adjust the seasoning if needed. Serve over rice, on nachos, or as a taco filling. This bean mix pairs well with avocado, cheese, and sour cream.
Ingredients
For the Mexican Spice Mix:
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tbsp ground coriander
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- ½ tsp cayenne pepper (adjust to taste)
- 1 tsp sea salt
- 1 tbsp organic sugar
- ½ tsp black pepper (ground)
Add all ingredients to a small bowl, mix well and pop into an airtight jar or container.
