Beetroot & Herb Seedy Crackers

  1. Preheat oven to 180°C and line a baking tray with baking paper.
  2. In a mixing bowl, whisk together dry ingredients.
  3. Add warm water and olive oil to the dry ingredients and mix until a dough forms. Let it sit for 5 minutes to allow the flaxseed to absorb moisture.
  4. Place the dough between two sheets of baking paper and roll it out thinly (about 2mm thick).
  5. Remove the top baking paper, sprinkle with extra flaky sea salt, and cut into squares or desired shapes using a knife or pizza cutter. Evenly prick the surface with a fork (this helps them get super crispy).
  6. Bake for 15-20 minutes, or until crisp and slightly golden at the edges.
  7. Let cool completely before breaking apart and storing in an airtight container.

Serving Ideas:

  • Pair with hummus, guacamole, or a cashew cheese spread.
  • Enjoy with a side of fresh veggies for a nutritious snack.
  • Crush over salads for added crunch.
