Beetroot & Herb Seedy Crackers
Ingredients:
- 1 cup potato starch
- ½ cup flaxseed
- 2 tbsp beetroot powder
- 2 tbsp sesame seeds (white or black)
- 1 tsp flaky sea salt, plus extra for sprinkling
- 1 tbsp dried thyme
- 1 tsp garlic powder
- ½ cup warm water
- 2 tbsp olive oil
Instructions:
- Preheat oven to 180°C and line a baking tray with baking paper.
- In a mixing bowl, whisk together dry ingredients.
- Add warm water and olive oil to the dry ingredients and mix until a dough forms. Let it sit for 5 minutes to allow the flaxseed to absorb moisture.
- Place the dough between two sheets of baking paper and roll it out thinly (about 2mm thick).
- Remove the top baking paper, sprinkle with extra flaky sea salt, and cut into squares or desired shapes using a knife or pizza cutter. Evenly prick the surface with a fork (this helps them get super crispy).
- Bake for 15-20 minutes, or until crisp and slightly golden at the edges.
- Let cool completely before breaking apart and storing in an airtight container.

- Enjoy with a side of fresh veggies for a nutritious snack.
