Vegan Rocky Road
Looking for a plant based rocky road recipe? Look no further, the below is super simple, delicious and a real crowd pleaser. Best of all it has everything you want from a rocky road, rich chocolate, chewie blackcurrant bites, crunchy buckwheat & coconut!
500g Dark Chocolate Drops
50g Coconut Chips
100g Vegan Marshmallows
100g Buckwheat Groats
1tsp coconut oil (not essential but helps to make the rocky road easier to cut)
1. Add the dark chocolate to a bowl and gently melt using a double boiler (bowl placed over a saucepan filled with water on a low heat. The chocolate bowl should not be touching the water in saucepan) OR for short bursts on low power microwave. While chocolate is melting line a dish with parchment paper or recycled foil.
2. Once the chocolate has melted add the oil and stir, then add all other ingredients. Combine well and pour into prepared dish or a silicon mould.
3. Allow mix to cool and then place in the fridge for at least 3 hours or until set and hard.
4. Remove from fridge 30 mins before cutting. Place the rocky road onto a chopping board and using a large knife cut to desired size.
Store in an air tight container.
