Stuffed Focaccia Bread

This Fabulous Focaccia recipe is so easy to whip up, making it perfect for those last minute picnics.

Ingredents

Organic Extra Virgin Olive Oil 

High-Grade Flour

Baker's Yeast

White Sugar

Iodised Table Salt

Toppings:

Sun Dried Tomatoes

Kalamata Olives

1 Roughly Sliced (Pre Roasted) Red Onion

75g Feta Cheese

1/4 cup grated cheese (optional)

Dried Thyme

Method:

Step 1. Drizzle 2 tablespoons of our Organic Extra Virgin Olive Oil over the bottom of an oven dish, we find our enamel baking trays perfect for the job!

Step 2. Mix 3 & 1/4 Cups High-Grade Flour and 1 teaspoon of Iodised Table Salt in a large bowl.

Step 3. Add 2 tablespoons of Olive Oil, 2 teaspoons of Baker's Yeast and 2 teaspoons of White Sugar, into 450ml luke warm water, let sit for 5 mins and then pour into dry mixture.

Step 4. Mix dough until well combined. The mixture should be quite wet. Cover with a clean tea towel and allow to double in size (approx 3 hours)

Here comes the fun part.....

Step 5. Take half of the dough and spread out on the oiled oven tray. Add two thirds of the remaining ingredients evenly to the top of the dough. 

Use the reserved half of the dough to layer on top. We find it easiest to dollop 3-4 pieces of the dough on top and then stretch them to join.

Step 6. Sprinkle over the remaining 1/3 of toppings to the top of the second layer of dough and season well with salt and drizzle with olive oil.

Step 7. Bake for 35 mins in a pre heated oven set at 180degrees. Serve warm.
