White sugar's regular size gives it a uniform texture and consistency, while the lack of molasses means it has a clean color and flavor, making it ideal for baking and sweets. Your baking takes on a different texture or structure if there is less sugar, like bread, or more sugar, like cupcakes. 

Uses for White Sugar

Baking with white sugar adds a light texture, a sweet taste, and doesn't overpower other flavours. Preserves such as jam and relish can also be made with white sugar. Candy such as fudge and toffee made at home requires it as well.
