Matcha Peanut Energy Balls

Packed with energising superfoods and antioxidants, these matcha-dusted peanut energy balls are easy to make and seriously delicious. Their naturally spooky green coating also makes them a perfect healthy treat for Halloween.

  1. Prepare the mixture:
    • In a food processor, blend the oats, pumpkin seeds, and dried peaches until finely chopped.
    • Add the peanut butter, melted coconut oil, maple fibre syrup, vanilla extract, and a pinch of sea salt. Blend again until the mixture sticks together.
  2. Add the spooky touch:
    • Stir in the mini chocolate chips for a fun, creepy fleck of dark colour.
  3. Form the balls:
    • Scoop out small portions and roll the mixture into bite-sized balls.
  4. Optional decoration:
    • Roll the balls in matcha powder for an eerie green dusting effect.
  5. Chill and enjoy:
    • Place the energy balls in the fridge for 30 minutes to firm up before serving.
