Smokey BBQ Butter Beans

Here’s a delicious recipe for Smokey BBQ Butter Beans using butter beans. The perfect brunch, lunch or dinner recipe. Pair with crusty bread or add a poached egg.

Ingredients:

2 tins of butter beans, drained and rinsed
1 onion, finely chopped
2 teaspoons of crushed garlic
1 cup tomato passata
1/4 cup maple syrup or brown sugar
1/4 cup apple cider vinegar
1/4 teaspoon of cayenne pepper
1 tablespoons smoked paprika
1/2 teaspoon mustard seeds
1 teaspoon cumin
Salt and pepper to taste
1 tablespoon olive oil
1/2 cup water or vegetable stock:

Rinse and drain butter beans. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent. Add the minced garlic and cook for another minute.

Add tomato passata, maple syrup (or brown sugar), apple cider vinegar, smoked paprika, cayenne, mustard seeds, cumin, salt, and pepper to the pot. Stir well to combine.

Add butter beans to the pot and mix them with the sauce. Pour in the water or vegetable stock to reach your desired consistency.

Reduce the heat to low and let the beans simmer for about 20-30 minutes, stirring occasionally. This will allow the sauce to thicken.

Enjoy the BBQ butter beans as a side dish, or serve them over rice or with crusty bread. Also great with poached eggs and fresh herbs.
