- 1 tablespoon lemon juice
- 1/4 cup caster sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
For the crumble topping:
- 1 cup wholegrain rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup almond flour (can sub for an extra 1/2 cup of all-purpose flour to make nut free)
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1/2 cup coconut oil, melted
Method
-
Preheat your oven to 190°C
-
In a large bowl, combine the sliced apples, lemon juice, granulated sugar, cinnamon, and nutmeg. Toss until the apples are evenly coated with the mixture.
-
Transfer the apple mixture to a 9" baking dish and spread it out evenly. (The size of your dish can vary based on your preference to have thicker or thinner layers).
-
In a separate bowl, combine the rolled oats, all-purpose flour, almond flour, brown sugar, and salt. Mix well.
-
Pour the melted coconut oil over the dry mixture. Stir until the ingredients are thoroughly combined and the mixture becomes crumbly.
-
Sprinkle the crumble topping evenly over the apple mixture in the baking dish.
-
Place the dish in the preheated oven and bake for about 35-40 minutes, or until the topping turns golden brown and the apples are tender.
-
Once baked, remove the dish from the oven and allow it to cool for a few minutes before serving.
-
Serve the vegan apple crumble warm on its own or with a scoop of ice cream or whipped cream for extra indulgence.
