Raw Power & Almond Muesli Bars
Ingredients:

1 can of Vegan Sweetened Condensed Coconut Milk (320g)

2 cups of Rolled Oats
Rolled Oats -
1 cup of Almond Flour
Almond Flour -
1½ cup of Raw Power
Raw Power - 1/2 cup of Chocolate Drops
- ½ tsp Vanilla Extract (optional)
- Pinch of Salt
Instructions:

In a large mixing bowl, combine the rolled oats, almond flour, pumpkin seeds, sunflower seeds, dried fruits (if using), and a pinch of salt. Stir well to combine.

In a small saucepan, gently heat the vegan sweetened condensed coconut milk over low heat until it becomes slightly runny and easier to mix (about 2-3 minutes). Do not let it boil.

Pour the warm condensed coconut milk over the dry ingredients. Add the vanilla extract, if using. Stir the mixture thoroughly until everything is evenly coated.

Line a square or rectangular baking tin (about 8x8 inches) with parchment paper. Transfer the muesli mixture into the tin, pressing it down firmly with a spatula to ensure it's compact.

Place the tin in the fridge for at least 2-3 hours, or until the bars have set and are firm to the touch.
- Once set, melt the chocolate in a double boil or in the microwave in bursts. Use a table spoon to drizzle chocolate over the slice. Pop back in the fridge for about 10 mins.

Once set, remove from the tin and slice into bars or squares. Store in an airtight container in the fridge for up to a week.
Notes:
- You can swap or add other nuts and seeds based on preference, such as almonds or flaxseeds.
- If you find the bars a little sticky once set you can sprinkle desiccated coconut on a plate and press the base of each piece of slice into the coconut to coat the bottom.
