- 1 egg white
- 2 cups of natural almonds
- 1/3 cup of white sugar
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
Preheat oven to 130C
Beat egg white with one teaspoon of cold water until mixture is frothy.
Add almonds, sugar, salt, and cinnamon to egg mixture and stir until almonds are evenly coated.
Spread almonds into single layer on a lined baking tray, pop in the oven for 30-40 minutes, tossing once. Keep an eye on the almonds as nuts can burn quickly.
Once golden and fragrant, remove almonds from oven, allow to cool. The almonds may appear moist when you first remove from oven, but as they cool the coating will harden.
Add a wee ribbon to make it a festive gift.
Stored in an airtight container these almonds will keep for a few weeks.
