About Green Lentils
From Canada, these French style green lentils add a rich flavour and texture to meals. A small, olive-coloured legume, they have an earthy, almost peppery flavor and smell. This type of lentil doesn't require presoaking, so it's quick to cook within 30 minutes and full of nutrients. These French-style green lentils also retain their shape once cooked, so they are extremely versatile in a number of recipes.
Uses for Green lentils
The lentils stay whole when cooked, making them a great protein-packed addition to wraps, burritos, tacos and salads. As well as veggie alternatives to classic dishes like this Shepherd's Pie, they're great in veggie patties and fritters. They're a nice addition to vegetable soups, stews, and curries. You can puree your green lentils to make a flavoursome and nourishing dip to serve with your antipasti platter, or just add a dollop to your poke Bowl. Make sure you don't add salt to lentils while you're cooking them, as it'll interfere with the outer layer and make them tough, which isn't so good.
