OO flour is named after the Italian grading system. Grades are assigned between 2 and 00, where 0 is the finest and 2 is the coarsest. Superfine flour provides a chewier texture to baking.
Uses
It is the best flour for true Neapolitan pizza because it results in a nice, crispy crust with lots of big airy pockets, but isn't so chewy that your mouth gets sore after eating a few slices. You can also use it to make pasta as it gives it a little more 'bite'.
