Ingredients

3 tbsp olive oil

1 tbsp chilli oil

1 tbsp cider vinegar

1 tsp Dijon or wholegrain mustard

A pinch of salt

A good grind of black pepper

1 tsp honey

Optional extras:

A pinch of garlic powder

A pinch of smoked paprika

A small squeeze of lemon if you want a brighter finish

Method

Add all ingredients to a dressing maker or small jar.

Shake until well combined and emulsified.

Taste and adjust, adding more vinegar for sharpness or more olive oil for a softer finish.

Keep in the fridge for up to a week.
