Spicy Mexican Winter Soup

When the winter chill sets in, nothing warms you up quite like a big bowl of smoky, spicy Mexican soup. The best part? This recipe is built almost entirely from ingredients you can grab from Refill Nation, zero-waste, full of flavour, and seriously satisfying.

🌶️ Ingredients

Serves 4–6 | Prep: 15 mins | Cook: 40 mins

To Serve

  • Sour cream or coconut yoghurt
  • Fresh coriander
  • Sliced avocado or guacamole
  • Corn chips or warm tortillas
  • Extra Apostle Hot Sauce on the side (obviously)

Method

  1. Sauté the base. Heat olive oil in a large pot over medium heat. Add the onion and cook for 5–6 minutes until softened. Add the garlic and cook for another minute.
  2. Build the heat. Add the chipotle sauce. Stir well and cook for 1 minute.
  3. Add the tomatoes. Stir in the tomato paste, whole tomatoes, and passata. Cook for 5 minutes, stirring occasionally to break up the tomatoes.
  4. Simmer. Pour in the stock, add the black beans, corn, cumin, and smoked paprika. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 25–30 minutes until the soup thickens and the flavours meld together.
  5. Taste and adjust. Add a few dashes of Apostle Hot Sauce for extra fire. Taste and adjust seasoning.
  6. Serve it up. Ladle into bowls and top with sour cream, fresh coriander, avocado, and a generous drizzle of Apostle Hot Sauce. Serve with corn chips or warm tortillas on the side.
