Smokey Roasted Tomato Sauce Recipe

This is the perfect way to make the most of a bumper tomato season and stretch the goodness out over the year! This tangy & smokey sauce is perfect for adding flavour to any meal.

Ingredients:
2 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1kg fresh tomatoes
3 tablespoons tomato paste
2 teaspoons smoked paprika
3 tablespoons organic golden sugar
4 tablespoons apple cider vinegar
Salt and black pepper to taste

Preheat your oven to 200°C. Slice the tomatoes in half and place them on a baking sheet lined with parchment paper, cut side up. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for about 25-30 minutes or until the tomatoes are soft and caramelized. Once done, remove from the oven and let them cool slightly before peeling off the skins.

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes.

Add the minced garlic to the saucepan and cook for an additional 1-2 minutes until fragrant.

Mash the roasted tomatoes with a fork or blend them in a food processor until smooth.

Add the mashed or blended roasted tomatoes to the saucepan along with the tomato paste, smoked paprika, organic golden sugar, and apple cider vinegar. Stir well to combine.

Let the sauce simmer gently for another 10-15 minutes. Stir occasionally to prevent sticking.

If you prefer a smoother consistency, you can use a stick blender or transfer the sauce to a blender and blend until smooth.

The longer you cook the sauce the more the flavours will deepen and consistency thicken. Once the sauce reaches your desired consistency and flavor, remove it from the heat and season to taste.

Carefully spoon or pour the sauce into sterilized bottles or jars and seal tightly. Once completely cooled store in a dark cool place or the fridge until needed.


Garnish with fresh herbs like basil or parsley if desired.
