A warming, high-protein winter bowl built around our textured soy protein, rehydrated and glazed sticky-sweet-and-spicy with miso, ginger and maple, then piled over rice with charred cabbage. It's fast, budget-friendly and delicious!

Ingredients
Sticky soy protein
- 1½ cups textured soy protein/TVP, rehydrated in hot vegetable stock for 10 minutes and squeezed dry
- 1 tbsp neutral oil
- 3 cloves garlic, finely chopped
- 1 thumb ginger, finely grated
- 2 tbsp white miso paste
- 2 tbsp tamari or soy sauce
- 1½ tbsp maple syrup
- 1 tsp chilli flakes or gochujang, to taste
- 2 tbsp water, to loosen the glaze
Charred cabbage
- ¼ savoy or wombok cabbage, cut into thick wedges/ribbons
- 1 tbsp sesame oil
- Pinch of sea salt
Base
- 1 cup brown rice or jasmine rice
To finish
- 2 tbsp sesame seeds, toasted
- 2 spring onions, sliced
- Optional: a spoonful of kimchi or quick-pickled cucumber for extra gut-health tang
Method
- Cook the rice. Add 1 cup of rice and 1.5cups of water with a pinch of salt to a boil in a covered pot. When boiling reduce heat to low for 12 minutes without removing lid. Take off heat and leave for another 5 minutes without removing the lid.
- Cover with hot stock, soak 10 minutes, then drain and squeeze out excess liquid with your hands.
- Heat sesame oil in a wide pan or wok over high heat. Add the cabbage and let it sit undisturbed for 2–3 minutes to char, then toss and cook another 2 minutes until just tender-crisp. Season with salt and set aside.
- In the same pan, add a little more oil, then the garlic and ginger, cook 30 seconds until fragrant. Add the soy protein and stir-fry 3–4 minutes until it starts to catch and crisp at the edges.
- Whisk miso, tamari, maple syrup, chilli and water together, then pour over the soy protein. Toss and cook 2–3 minutes until sticky and coated.
- Spoon rice into bowls, top with the sticky soy protein and charred cabbage, scatter with sesame seeds and spring onion. Add kimchi or pickle on the side if using.
