Dark Chocolate Peaches with Pistachio

This is an easy recipe that combines organic dark chocolate with tangy & tart dried peaches. It's quick to make and perfect for gifting, snacking, or enjoying with your morning coffee.

Ingredients

400g dark organic chocolate

12-14 dried peaches (approx 250g)

100g Pistachios shelled

Pinch of flaky sea salt

This recipe can be made as one large bar that you slice up or made in grease-proof mini muffin tins.

If using muffin tins, place one to two dried peaches in the bottom of each muffin cup. If making a block, line a baking tray with greaseproof paper and lay out all of your peaches in a square or rectangle and so they are flat and all touching but not overlapping.

Melt chocolate. Add all of the chocolate into a microwave safe bowl or glass bowl. You can either microwave the chocolate in 30 second bursts, stirring with a rubber scraper in-between bursts until the chocolate is melted and smooth. Alternatively you can melt using a double boil, stirring occasionally until smooth (be careful to not let any water bubble up and get into the chocolate as it will seize).

While the chocolate is melting, roughly chop the pistachios. 

Pour chocolate evenly over the peaches, using the scraper to get all of the chocolate goodness from the bowl. 

Evenly sprinkle over the pistachios and a pinch of flaky sea salt. Place the tray into the fridge for at least 1 hour.

Once set, cut up chocolate and serve.

Store in an airtight container in the fridge.
