Banana & Oat Pancakes
Ingredients
1.5 cups rolled oats
2 ripe banana, mashed
2 eggs
1 teaspoon baking powder
1/2 cup milk (you can use any type of milk - almond, soy, cow's milk, etc.)
1/2 teaspoon vanilla extract (optional)
Pinch of salt (optional)
Make batter. Add all ingredients to a food processor or smoothie maker. Blitz until you have a smooth batter. If you think your batter is too thick, add a little more milk.
Cook. Once you have made the batter, allow it to rest while you head up a frying pan. Once hot add a drizzle of oil or a knob of butter. Using a serving spoon dollop the batter into the pan. Once bubbles appear on the surface of your pancakes use a spatula to flip.
Eat. Enjoy while pancakes are warm. Serve with maple syrup, fruit or a topping of choice.
