Well, friends, we think this double ginger cookie is pretty hard to beat! The tiny bits of crystallised ginger add a special warmth & chewie texture. Easy to make at home & fun for all ages. The perfect home-made cookie.
How to Bake:
1. Heat oven to 170C. Beat 150g of room temp butter and eggs until combined in a large bowl.
2. Add contents of jar to egg mixture and mix well until dough forms (may be slightly crumbly). Form the dough into a ball and refrigerate in bowl for 30 mins.
3. Once chilled, roll the dough on a floured surface until 5mm thick. Using a cookie cutter, cut cookies and place on a baking tray lined with baking paper. Form a ball with the leftover dough and re-roll and repeat cutting.
Bake in the oven for 8-10 mins or until golden brown. Cool on a wire rack and store in an airtight container.
